One of our favorite summer stone fruits that pairs so well with pork. You can simply pair the pork with fresh peaches or try our tasty recipe.
Peach Chutney
Ingredients:
3 pounds fresh peaches, blanched, peeled and diced
3 tablespoons monk fruit sugar
1 cinnamon stick or ½ teaspoon powder
1 teaspoon mustard seeds
1 teaspoon coriander seeds
3 each clove
4 each all-spice
½ cup raisins or dry fruit of your choice
1 each dry chile de arbol
3 cups apple cider vinegar
2 small vidalia onions, diced
2 teaspoons Himalayan sea salt
Instructions:
- Some like to blanch the peaches in hot water and shock in an ice cold water bath and then remove skins. I say, skins or no skins is all good.
- Place all ingredients in a heavy gauged sauce pot and bring to a low simmer for up to 45 minutes, uncovered, stirring with a wooden spoon until it gets gooey and jammy.
- Spoon over your favorite cut of Beeler’s Pure Pork
- Store in a jar in refrigerator or use canning process for preservation
