Red Eye Gravy

We took this Southern classic and added our Beeler’s flare! This is a breakfast favorite served over ham, cheesy polenta or with biscuits.


2 packages-6 ounce package of Beeler’s Ham, diced or hand shred

1 teaspoon Beeler’s rendered Bacon fat

½ small yellow onion, diced

2 cloves of garlic, minced

½ cup black coffee

½ cup pork stock/broth or chicken or beef

1 teaspoon organic local honey

1 tablespoon butter

Black pepper or red chili flake to taste




  1. In a heavy bottomed saucepan, add rendered bacon fat, ham, onion and garlic and begin to caramelize on medium high heat.
  2. Once these ingredients are starting to brown, add black coffee, stock and honey and begin to reduce.
  3. When the sauce has reduced by more than half, finish with butter and adjust seasonings with pepper or spice.
  4. Serve over Beeler’s Pure Pork Ham accompanied by fresh biscuits, cheesy polenta or skillet potatoes.
