We took this Southern classic and added our Beeler’s flare! This is a breakfast favorite served over ham, cheesy polenta or with biscuits.
Red Eye Gravy
2 packages-6 ounce package of Beeler’s Ham, diced or hand shred
1 teaspoon Beeler’s rendered Bacon fat
½ small yellow onion, diced
2 cloves of garlic, minced
½ cup black coffee
½ cup pork stock/broth or chicken or beef
1 teaspoon organic local honey
1 tablespoon butter
Black pepper or red chili flake to taste
- In a heavy bottomed saucepan, add rendered bacon fat, ham, onion and garlic and begin to caramelize on medium high heat.
- Once these ingredients are starting to brown, add black coffee, stock and honey and begin to reduce.
- When the sauce has reduced by more than half, finish with butter and adjust seasonings with pepper or spice.
- Serve over Beeler’s Pure Pork Ham accompanied by fresh biscuits, cheesy polenta or skillet potatoes.
